Easy & Healthy weeknight meal Recipe - Smoked Sausage Sheet Pan

My teenage son coined the term “Mama’s Monday night sheet pan” a while back once he realized it was my go-to for Monday evenings. This is a super easy, quick, healthy, and inexpensive meal that I make pretty much every Monday night. It is essentially a meal in itself, but you can always add a salad (or something more kid-friendly) as a side. I love sheet pans because you can play around with the ingredients and really never go wrong! Here are the most common ingredients I use:

  • Turkey smoked sausage, sliced (turkey is WAY healthier than the other options and tastes the same so don’t sleep on this ingredient)

  • 1 red pepper, sliced

  • 1 green bell pepper, sliced

  • 1 onion, sliced

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 2 tbsp extra virgin olive oil

  • salt, pepper, garlic powder, and cajun seasoning to taste

  • ½ -1 bag of Better Goods oven roasted Yukon gold potatoes or a couple of diced potatoes of your choice (optional)

I started adding the potatoes for the men in the house, and it’s great to have a little carb mixed in there. Because, carbs. I could be nice to the husband and add mushrooms, but it’s okay to be selfish sometimes. Preheat the oven to 400 degrees. Place sliced sausage on baking sheet (I use non-stick foil). Then mix all other ingredients in a large bowl, making sure to coat the veggies evenly with the olive oil and seasonings of your choice. Then spread the vegetables out on the pan on top of the sausage. Bake for 15 minutes then stir. Bake for another 10-15 minutes, depending on how you like your veggies cooked. That’s it, easy stuff. And it’s just as good reheated for a healthy lunch option during the week.
